I’m Dani Lea, the creator of The Core Food — a blog dedicated to simple, nourishing recipes designed for people living with autoimmune disease, and want to reduce inflammation or just eat healthy.

This space was born out of necessity, not trend. When my own diagnosis forced me to completely rethink the way I eat, I couldn’t find recipes that felt realistic, approachable, and actually delicious. So I decided to create them myself.

I’ve always loved watching food videos — the kind you save thinking «maybe one day I’ll try this,» but never actually do. For a long time, healthy eating felt overwhelming to me. Restrictive. Complicated. Most recipes I found called for hard-to-find ingredients or felt completely disconnected from how I actually wanted to live and eat.

That changed when I was diagnosed. Suddenly, what I put on my plate wasn’t just a choice — it was part of my healing. I started researching the anti-inflammatory diet, gut health, and the connection between food and autoimmune conditions. And slowly, I began experimenting in my kitchen with recipes that are gluten-free, dairy-free, unprocessed, and genuinely enjoyable.

The Core Food is my journal of that journey.
