Quick, Fresh & Perfect for Busy Days!

Ingredients:

  • 150–200 g ground turkey

  • 1 tbsp grated ginger

  • 1 tbsp coconut aminos or Lemon juice + honey (½ lemon + ½ tsp honey)

  • 1 cup diced bell peppers

  • Romaine or butter lettuce leaves

Directions:

1. Cook the Turkey
Heat a pan over medium heat. Add the ground turkey and cook for 6–8 minutes, breaking it up as it browns.

No need for extra oil if your turkey has a little fat — it will release as it cooks.

2. Add Flavor
Mix in the ginger, garlic, and bell peppers. Cook for 5 more minutes, until the peppers soften a bit.

3. Add the Sauce
Pour the coconut aminos or you can replace with Lemon juice + honey into the pan.

Stir well and let it cook 2 minutes so the flavor absorbs.

4. Assemble & Enjoy
Spoon the turkey mixture into lettuce leaves. Roll them up like tacos — and that’s it!

I started making these wraps on those afternoons when I just didn’t have the energy for anything. I didn’t want to dirty a bunch of dishes, I didn’t feel like cooking, and honestly, all I wanted was something quick and delicious so I could eat, head straight to the couch, and rest until bedtime.
They became my little lifesaver on low-energy days — simple, flavorful, and ready in minutes .
