Flourless Healthy Chocolate Lava Cake

Today I was craving something sweet, but since I’m following an anti-inflammatory diet, I try to keep my sugar intake as low as possible. So I found this recipe and decided to give it a try… and let me tell you, it turned out absolutely delicious—it completely satisfied my craving.

I know that words like “gluten-free,” “healthy,” and “dairy-free” might not sound very tempting when it comes to dessert, but trust me on this one. You have to try it! It’s quick to make, incredibly tasty, and the perfect treat for when those sweet cravings hit.

Yield: 2

Materials

  • 2 Eggs
  • 1/3 cup unsweetened cocoa powder
  • 2 tablespoon sweetener of choice (erythritol, monk fruit, or preferred)
  • 1/3 cup almond milk or, oat milk, or anyone you like
  • 1 tablespoon baking powder
  • 1 small piece of dark chocolate (for the center)

Instructions

  • In a bowl, whisk together the eggs, cocoa powder, sweetener, milk, and baking powder until smooth and lump-free.
  • Pour the mixture into two small ramekins or heatproof cups.
  • Place a piece of dark chocolate in the center of each one (don’t push it all the way down).
  • Cook in an air fryer at 160°C (340°F) for 5–7 minutes, until the edges are firm but the center remains soft.
  • Alternatively, you can microwave it for about 60–90 seconds, depending on your microwave’s power. The center should still look slightly gooey.
  • Carefully remove and let cool for 1–2 minutes before serving.
